In this recipe I use my own balsamic reduction. I find the mix perfect for dipping bread in as a starter. I also use it as a salad dressing for the softer, baby leaves as this delicate dressing does not wilt them. Occasionally, I don’t shake the bottle enough and I find that I have to top it up with a little extra virgin olive oil.

Description:

I have tried many Balsamic vinegars and find most of them sharp and bitter. I therefore decided to create my own reduction many years ago – I love it, and I hope you will too. Use as a dipping sauce with extra virgin olive oil, drizzle over salads, or use as a cooking aid where a dash of sweetness is required. Has to be sampled to be fully appreciated.

Whole fresh garlic bulbs are crushed and preserved using a time-honoured method from my village in Italy. This concentrated garlic has a strong flavour with a hint of natural sweetness. An absolute staple of your store cupboard. Use it as a base for soups, sauces and stews, or in stir fry dishes. It is also my secret ingredient to a mouth watering garlic bread. Try it for yourself.

Although this product appears to be very simple consisting of two ingredients the traditional mehtods involved in creating a chilli oil which has flavour as well as heat is an art in itself. A little really does go a long way. I truly can’t live without this product in my kitchen.

This is a rare treat as Wild Garlic is extremely seasonal. It has a noticeable garlic aroma but is not overpowering. Blended with extra virgin olive oiland seasoned to perfection, this Pesto is bursting with mouthwatering flavour. More than 20 garlic plants make each 200ml jar.

The Italian sauce that no kitchen should be without. Made to a traditional family recipe using the best Italian passata & herbs, and slow cooked to concentrate the flavour. Absolutely no preservatives – I cook with care, not chemicals! Simple but very tasty – underestimate my Napoletana sauce at your peril.

Description:

Everybody’s favourite meat sauce, made to my own personal recipe and using quality ingredients. This is not an aid for making a Bolognese sauce, it is complete- with meat already added – giving arich and full flavour. I have been making this sauce and preserving it in jars for as long as I can remember.

Ingredients:

Passata, Quality Minced Beef, Onions, Oil, Seasoning, Herbs.

Description:

The best passata is simmered with chunks of mushrooms, peppers, celery and carrots. Chillies are also added which gives this vegetable sugo a subtle chilli kick. Made the traditional Italian way; where the sugo is thickened and sweetened slowly without any additives or preservatives.

Description:

Homemade with 100% fresh tomatoes and a touch of added salt. Most passata that you can buy is, at best, crushed tomatoes – complete with skins and pips, and at worst, frozen tomato concentrate. I make my passata with perfectly ripe, locally grown tomatoes. I remove the skins and pips, leaving just the flesh of the fruit.
