In this recipe I use my own balsamic reduction. I find the mix perfect for dipping bread in as a starter. I also use it as a salad dressing for the softer, baby leaves as this delicate dressing does not wilt them. Occasionally, I don’t shake the bottle enough and I find that I have to top it up with a little extra virgin olive oil.

I have tried many Balsamic vinegars and find most of them sharp and bitter. I therefore decided to create my own reduction many years ago – I love it, and I hope you will too. This is not an aid for making a Bolognese sauce, it is complete- with meat already added – giving arich and full flavour. I have been making this sauce and preserving it in jars for as long as I can remember.

Description:
The best passata is simmered with chunks of mushrooms, peppers, celery and carrots. Chillies are also added which gives this vegetable sugo a subtle chilli kick. Made the traditional Italian way; where the sugo is thickened and sweetened slowly without any additives or preservatives.

Description:
Homemade with 100% fresh tomatoes and a touch of added salt. Most passata that you can buy is, at best, crushed tomatoes – complete with skins and pips, and at worst, frozen tomato concentrate. I make my passata with perfectly ripe, locally grown tomatoes. I remove the skins and pips, leaving just the flesh of the fruit.
